Belonging to the Mazzetti’s Family tradition, which dates back to 1846, Mazzetti L’Originale Balsamic Vinegar of Modena is produced starting from dedicated and exclusive recipes which are unchanged from the seventies. Mazzetti L'Originale are produced following the rules of the strict I.G.P. (Geographic Protected Indication) disciplinary of the E.C. which is protecting the products since June, 2009. Also Mazzetti L’Originale is a member of the CTAB (Balsamic Vinegar of Modena Consortium). The association founded to protect the product denomination and to represent the producers. Additionally, "Mazzetti L'Originale" embraced the philosophy of AIB (the Italian Balsamic Vinegar of Modena Tasters Association). AIB's grading system foresees a classification of products in four quality categories, based both on sensory and chemical analysis, applied to the entire production of each manufacturer and assigns a variable number of vine leaves to each product in relation to its characteristics. Each bottle carries the 'leaves' on a special coloured strip which is printed on its label: a simple and clear indication which tells consumers the quality level of product they are going to buy, and indicates him its best employ in the kitchen.
