The secrets for a true, genuine home-made pasta are using the ancient bronze wire-drawing technique and only the best types of durum wheat. Our main ingredients are Italian durum wheat flours and the pure water coming from our local springs, combined with the carefully selected desiccated vegetables which give our pasta a variety of colours. Following tradition, the PIPOLO pasta factory ensures manufacturing so that its product maintains its original attributes of quality and flavour. For this reason the drying process is slow and at a controlled temperature in order to keep intact the organoleptic properties of the product.
